Dinner with - Domaine Henri Ruppert
For the first edition, we invited Domaine Henri Ruppert to showcase their products. Enjoy an exclusive evening with products tasting and a five-course menu with wine pairing, specially created by our Chef Thibault Bera with the products of Domaine Henri Ruppert — including truffles, crémant, wine and other estate specialties.
Throughout the evening, guests will have the opportunity to meet and exchange with the Ruppert family, discovering the stories, traditions, and passion behind each product.

- Smokes leeks, shellfish ravigote and hergs
- Roasted sea bass, caramelized endive, kumquat, mushroom brith infused with coffee
- Poached free-range poultry, Albufera sauce, celery ravioli, hazelnut condiement, grated truffle
- Confit pineapple carpaccio, pomegranate and rosé Crémant sorbet from the Domaine

Starter:
Smoked trout heart or chilled leeks in vinaigrette (Vegetarian), served with a heart of Baltic farm cheese mousse and rose petals.
Main Course (choice of):
• Ballotine of sole fillet, raspberry hollandaise sauce, whipped crème fraîche, fresh coriander, and leeks.
or
• Beef Wellington, served with fresh truffle risotto and a citrus touch.
Dessert:
• Heart-shaped macarons with chocolate and red fruits.
